INGREDIENTS
- Whole Chicken – 3 1/2 lb
- Onion – 1 Medium
- Chive – 1 Bundle
- Scotch Bonnet Pepper – 2 (Seeds Optional)
- Garlic – 6 Cloves
- Pimento – 4
- Thyme – 1 Sprig
- All Spice Powder – 1 Tbsp
- Nutmeg – 1 Tsp
- Five Spice Powder – 1 Tbsp
- Black Pepper – 1 Tbsp
- Salt – 1/2 Tsp
- Soy Sauce – 1/2 Cup
- Vegetable Oil – 1 Tbsp
METHOD
- Wash, clean and divide chicken into quarters. Set aside.
- Using a food processor, combine all the dry ingredients followed by the soy sauce and vegetable oil. (Liquid may splatter)
- Add mixture to chicken and massage well.
- Cover and let marinate for 8 hours or overnight.
- Preheat oven to 350°F.
- Place chicken onto baking sheet and bake uncovered for 45 minutes.
